Pan Sautéed Pork Chops, and Zucchini Latkas

I believe that everyone should know how to make a good pork chop.  They are very easy to cook, taste wonderful, and when served look very classy.  My husband loves pork and beef in all its forms, so I’m consistently trying to find ways to reinvent standard pork chops, and create new side dishes to serve along with them.  Tonight I made my favorite version of pork chops: pork chops lightly sautéed in butter with sage and other Italian spices, and paired it with zucchini latkas.   I have never made zucchini latkas, but these tasted fabulous.  So good in fact that there were no leftovers (which rarely happens in my house!).


Pan Sautéed Pork Chops

2 bone-in pork chops, 1 inch thich
2 tbsp butter
2 tbsp olive oil
1 tsp sage powder
1 tsp Italian seasoning

1. Rinse pork chops in cool water.  Place both pork chops on plate, and season both evenly with half of the salt, pepper, sage powder, and italian seasoning.  (Some cooks prefer fresh herbs instead of dried seasoning, however I find that when seasoning meat that its easier to ensure that every piece has seasoning and the same flavor if you use dried seasoning.  Plus, my husband is not a fan of ‘leaves’ so i find that dried sage is better in our house then fresh sage).

2. Heat sauté pan with olive oil and half of the butter on medium-high, once butter is melted place pork chops in the heated pan seasoning side down.  While pork chops are in the pan, season the top side of both pork chops.  Brown pork chops for approximately 5 minutes (or until golden).  When browned, flip pork chops and brown on bottom side for 5 minutes.

3.  Once browned on both sides, move to oven safe plate, and place 1/2 tbsp of butter on top of each pork chop.  Place in oven at 350 degrees for 20 minutes.

4. Remove from oven, and serve!

Zucchini Latkas (was inspired by the Zucchini Fritters recipe on Smitten Kitchen)

2 zucchinis
1 egg
1 tsp salt
1 tsp pepper
1/2 tsp baking soda
1/2c flour
2 garlic cloves, finely chopped
1 small onion, finely chopped
1 tbsp butter
2 tbsp olive oil

1. Chop the ends off of both zucchinis.  Using a food processor (or a cheese grater) completely grate both zucchinis, and onion into a bowl.  Using a cheese cloth, squeeze the chopped ingredients until you get all the water out.  Return to the bowl.  Add egg, salt, pepper, baking soda, flour and garlic to the same bowl.  Using a fork completely mix the ingredients.

2. Heat a pan on medium, and add olive oil and butter.  Once butter is melted, using a tablespoon add spoonfuls of zucchini mixture to heated pan.  Cook for approximately 3 minutes, or until browned on the bottom.  Once browned on the bottom, flip like pancakes, and brown on the other side.

3. Remove from heat, and serve with apple sauce and sour cream. Enjoy!
